The holiday season comes with lots of treats and desserts. I love dessert and it’s hard to say no to apple pie and ice cream or holiday cookies but I’m trying to make healthier choices this season. That’s why I love Almond Butter. I love it for dipping with apples and celery, on toast, and even in baked goods. There is something very distinctive about the taste and it satisfies my sweet and salty cravings. Today I want to share with you a very simple recipe for almond protein cookies. These cookies are perfect for a mid-day snack or anytime you start craving something sweet.
Almond Protein Cookies
- 1 Tbsp Cacao Powder
- 1 Tsp Pumpkin Pie spice
- 1 Tsp Cinnamon
- 1/4 Cup Egg Whites
- 1/2 Cup Almond Butter
- 2 Scoops of Vanilla Protein (I love using IdealLean Protein)
- 1/2 tsp Vanilla Extract
- 1 Pack (1g) of Stevia Sweetener
- Mix all ingredients in a bowl until smooth.
- Roll into tiny balls and place on a greased cookie sheet.
- Bake at 350 for 10 mins or until inside is fully cooked (check with toothpick).
- Cool and enjoy!
These cookies are good for about 1 1/2 to 2 weeks. I stored mine in a latch storage jar to keep them fresher longer. You can eat 3 of these cookies and not feel guilty for indulging in a sweet treat. We all need cookies in our lives sometimes right? These little cookies are high in protein too!
