Breakfast Bake with a Kick

If you’re like me, you probably hate getting up early and making breakfast. I am a mirror image of a non-morning person, but I love breakfast. On the weekends, we love to bake and cook for the week. This breakfast bake is super easy and perfect for breakfast on the run.

Ingredients:

14          eggs

1/2        cup of Mexican blend cheese

24          oz. bag of hash browns

1             package (9.6 oz) Jimmy Dean Turkey Crumbles

2            Habanero peppers

2            Serrano chili

1/2         cup milk (makes the bake a little fluffier but is optional)  

Directions:

1. Mix your eggs together in a large bow.     2. Cut and chop you chili peppers. You can use as many chilis as you want. We like spicy, so we use an extra habanero chili peppers. 🙂 3. Add turkey sausage crumbles. 4. Add hash brown and chilies and mix everything together 6. Bake 45-60 minutes at 400 F depending on the size of your casserole dish. Periodically check when it gets closer to 45 mins. Make sure the bake is fully cooked by checking with a fork. 7. Take it out of the oven and let it cool. 8. Cut & serve. Now isn’t that super easy? I love this recipe and it’s easy to make. You can cut up squares and take them to work if you’re in a hurry. What are some of your favorite easy breakfast recipes?       It is so delicious and super easy! We were thinking it would be good with mushrooms and bell peppers as well 🙂

    I about choked when I read 14 eggs! But then again you said cook for the week….so oh okay 14 eggs it is. This sounds so good and I bet a tortilla would be a nice addition and yes I agree, more veggies for this house….and um…no thank you to turkey we LOVE pork!! 😉 Totally going to try this on the family.

      Hi Leah, yes 14 egg is quite a bit but not if your sharing 😉 I agree definitely needs more veggies. My boyfriend is the brains behind this recipe and veggies aren’t his favorite. However, I think i’ll add some bell peppers, mushrooms, and spinach for our next batch. I hope you’re family enjoys it 🙂

    I’m with you, I hate getting up in the am, but I love a good breakfast. This looks great. And, I’ve decided I need that jalapeno chopper!

    Oh yum! Breakfast is one of my favorite meals to have premade because I just never feel like cooking much in the morning, but I always want a good meal. This would be the perfect solution! Can’t wait to try it – it looks and sounds delicious!
