I love tacos! So much that my family and I celebrate it every week. We always have the same taco meat and I wanted to do something different. So I decided to make Carne Asada Tacos. But what do you put on a carne asada taco? It’s not like the traditional taco with lettuce and cheese. Pico de Gallo adds the perfect flavor to any taco. Topped with some avocado and I was ready to scarf these bad boys down.
Carne Asada Tacos with Pico de Gallo
Ingredients
For Taco:
- 1 lb of carne asada
- tortillas
- 1 avocado
- Pico de Gallo
For Pico de Gallo:
- 1 tomato cut in 1/2
- 1/2 white onion
- 1 garlic clove
- 1 jalapeño
- handful of cilantro
- 1/4 lime juiced
Directions:
For the pico de gallo the steps are so simple. I used my NutriBullet Select from Walmart to make it which saved me a ton of time and helped me skip the chopping of the dreaded onion.
First you want to put the cilantro, jalapeño , garlic, and onion into the NutriBullet Select or a blender and pulse until all the ingredients are chopped to your liking. Next put in your tomato (cut in half) and pulse again until fully chopped. Squeeze your lime and that’s it! Seriously took me less than 5 mins to make. Once you have your meat cooked just add it and the pico de gallo on some freshly warmed corn tortillas and top with avocado. Enjoy.
