Easy Massaged Kale Salad

I have never been a kale eater. I honestly didn’t even know much about kale at all until I started my Health Coach training. I love salads but my salads usually consisted of iceberg lettuce, carrots, and ranch dressing (barf). I can’t believe I used to eat such unflavorful food haha. 

One day in one of my lectures we started talking about easy cooking tips and recipes and Andrea Beaman taught us how to cook super simple easy recipes. One of these recipes was massaged kale salad. After that day I have been a lover of all kale salads and creating new recipes. 

Today I want to share with you an easy massaged kale salad that takes less that 15 mins to make.

For this salad I used:

An easy way to get the kale of the leaf is to slide your hand down the rib/stem and rip it into pieces. It’s easy and requires no chopping.

Add the sea salt and lemon and massage the kale until it turnes soft and bright green. Then drizzle a little olive oil and give it one more round of massaging. Your hard kale leaves have turned into a delightful green!

Next add your red cabbage and Brussels Sprouts and Voila! You have beautiful kale salad ready to eat!

I absolutely love kale salad. I make a big batch of it and then eat it throughout the week for lunch at work. Sometimes I add a little bit of chicken or nuts to it. You can create whatever you like with simple massaged kale salad.

    I love kale so much! This salad looks so good, and I love how you broke it down on how best to massage kale. It seriously makes such a huge difference in taste!

      It really does! A lot of people hate kale because it’s hard and tough but if you massage it, it makes a whole world of a difference. 🙂

    Oh this looks delicious! Plus the addition of brussel sprouts has me all in. I’m not a huge Kale person, but there is a restaurant near us that serves the most delicious kale salad and I do get cravings for it 🙂

    Yes, I love kale. I eat it everyday. I put it my smoothie everyday and I will eat it in a salad. This sounds a lot like how I prepare it. Kale is so great with craisins. I haven’t added brussels sprouts but I like the addition and think I will have to try it. Thank you so much for sharing this!

      Craisins are my favorite to add! It gives it that little hint of sweet. Also, apples are really good to add too. 🙂

    I love kale in salads and baked with seasonings. This combination sounds good. I love to add dried cranberries to my salads.

      I really want to bake some kale. I’ve never tried that. Or make my own kale chips! 🙂
