Today I bring you Vegan Spinach Fettuccine!
No I’m not Vegan but I do love dishes that are healthy and meat-less for the most part.
I originally made this up for my mom. I was getting dinner ideas ready for her one night and she said she was really craving fettuccine. My mom has cancer so I try to keep things super healthy for her when I’m visiting. So I went to Sprouts Farmers Market to see what I could whip up. I found this spinach fettuccine and was sold because of the chia seeds in it, obviously. I went down the sauce aisle and started looking for a healthier dairy-free fettuccine sauce and I found one made with cashew cream. I was a little apprehensive to try it but I was actually really good sauce (don’t let the texture fool you). My mom suggested adding peas but I had a different idea and added mushrooms and asparagus. It turned out to be a great dish and she loved it. I hope you do too. Bon Appetit!
